Making pasta dough by hand

Making pasta isn't as difficult as you might think - you just need a pasta machine. Pasta-making uses the same skills as bread-making but is much quicker to make than bread. What's more, you can flavour homemade pasta with an infinite variety of herbs, spices and flavourings.

-Mix the dry ingredients in a large mixing bowl.

-Add the beaten eggs and stir with a wooden spoon until the mixture is well combined.

-Turn the pasta dough out onto a lightly floured work surface and knead for 10-15 minutes, or until the dough is smooth and elastic.

-Wrap the dough in cling film and chill in the fridge for at least 30 minutes. It is then ready to roll.
