Maize, also known as corn, is a cereal crop that originated in South America, but is now grown around the world. When dried and ground, maize meal may be coarse (such as grits) or finely ground (such as masa harina). Corn tortillas, tamales and atole (a milky Central American drink) are made with ground maize. There are many different varieties to make different recipes, so be sure to get the right one.
