Cheese-crusted razor clams with garlic, chilli and lemon thyme

Ingredients

  • 150g/5oz butter
  • 1 tbsp fresh lemon thyme leaves
  • 2 leeks, finely chopped, trimmings reserved
  • 2 fennel bulbs, finely chopped, trimmings reserved
  • 1 red chilli, finely chopped
  • 3 garlic cloves, lightly crushed
  • 300ml/10½fl oz white wine
  • 1kg/2lb 2oz fresh razor clams, washed and drained
  • 110g/4oz fresh sourdough breadcrumbs
  • 20g/¾oz Pecorino cheese
  • lime wedges, to serve
