Lay the tuna slices onto a serving plate.
Mix the orange juice and lemon juice together in a bowl and then pour over the tuna.
Season with salt and freshly ground black pepper. Drizzle with olive oil. Scatter over the sliced kalamata olives and spring onion and serve.
