Place the sugar and water in a small saucepan over a medium heat. Once the sugar has dissolved remove from the heat.
Place the lychees, lime juice and lime zest into a bowl and mix together.
Add the sugar syrup to the bowl of lychees and lime and mix together.
Serve in a bowl.
