Heat the vegetable oil in a large pan and fry all the spices together for 2-3 minutes.
Add the leeks and red pepper and continue to cook for three minutes until the vegetables are soft.
Add the cooked rice and the fresh coriander and stir together.
Transfer to a serving dish and garnish with the sliced grapes.
