Soba noodles

Thin, grey-brown Japanese noodles made from buckwheat (which is gluten-free). Available dried, they are long and straight and look similar to spaghetti.


Soba noodles are used mostly in soups. They can also be added to stir-fries: stir them in carefully as they break apart easily.
