These tiny birds have a lot of flavour for their size and suit both quick or slow cooking. One quail would make a generous starter or light supper for one person; serve at least two per person for a generous main course.
Wild quail is now protected in the UK, so you can only buy farmed quail. This may well have been intensively reared so if welfare is an issue for you, check its provenance before you buy. Many butchers and supermarkets sell quail, but you may need to order it in advance.
Quail are fairly lean and good for roasting, grilling and casseroling; they also make good curries. They can be bought whole or boned for stuffing and roasting (some butchers sell them ready-stuffed).
