For boiling the bacon

For stewing the bacon

  • 25g/1oz unsalted butter
  • 4 large garlic cloves, peeled
  • 8 small shallots, peeled but with root end intact
  • 10 white peppercorns
  • 4 medium carrots, sliced on the diagonal to 5mm/¼in thick
  • 3 sticks celery, sliced on the diagonal to 5mm/¼in thick
