Cranberry and pear relish

Ingredients

  • 7oz (200g) light brown muscovado sugar
  • 10fl oz (300ml) water
  • 1 orange, grated zest and juice
  • 8oz (225g) fresh cranberries
  • 2 pears, peeled, cored and diced

Method

  1. Dissolve the sugar in the water and then boil for 5 minutes.

  2. Add the orange zest and juice and the cranberries and cook for 10 minutes, or until the berries are starting to burst.

  3. Add the pears and gently cook for another 5 minutes. Cool.
