Heat the sugar in a saucepan for 4-5 minutes, until melted and turning golden-brown.
Add the macadamia nuts, stir well and take the pan off the heat.
Pour the mixture onto a non-stick baking sheet and leave to cool completely.
To serve, break the brittle up into pieces.
