Preheat the oven to 200C/400F/Gas 6.
Heat the butter, mango slices and honey in an ovenrproof frying pan until the mixture is bubbling. Stir in the lime juice and transfer to the oven to roast for 5-6 minutes.
Heat the oil in a pancake pan and ladle the mixture in. Allow the mixture to coat the pan and fry the pancake for 1-2 minutes on each side or until golden.
Repeat to make further pancakes.
Divide the pancakes between two serving plates and top with roasted mango slices.
