Clean out the fridge and use up leftover veg you have in this simple curry recipe for one.
Preheat the oven to 180C/350F/Gas 4.
Put all of the ingredients and 125ml/4fl oz water into a small lidded ovenproof dish and mix until well combined.
Cover with the lid and bake in the oven for 30-40 minutes, or until the potatoes are cooked through.
