Vegetables with red pepper rouille

Ingredients

  • 4 tbsp olive oil
  • 2-3 garlic cloves, finely chopped
  • 3 large pinches of saffron threads
  • 3 mixed red and orange peppers, cored, deseeded and each cut into 6 strips
  • 3 courgettes, about 100g/3½oz each, chopped into 2.5cm/1in chunks
  • 2 onions, cut into wedges
  • salt and freshly ground black pepper
