Veggie-lovers bagel

Avocado gives this sandwich its creamy richness, and the healthy fats will help to keep you feeling full. Pack as many raw veggies as you can on top. Best made fresh.

Ingredients

  • 1 wholemeal or 50/50 thin bagel, sliced in half
  • ½ small avocado (about 45g/ /1½oz), sliced
  • 4 radishes, thinly sliced
  • 2 slices tomato
  • 30g/1oz roasted red pepper from a jar (not in oil), drained, sliced
  • small handful rocket
  • salt and freshly ground black pepper
  • ¼ tsp chilli sauce

Method

  1. Pile all the veggies onto the bagel, season with salt and pepper and dot over the chilli sauce.

If you use thin bagels (rather than standard ones) you can reduce the calories by 125Kcal.
