Buttermilk and vanilla panna cotta with mini doughnuts, orange jelly and mascarpone

For the panna cotta

  • 375ml/13fl oz Sauternes
  • 50g/1¾oz caster sugar
  • 5 sheets gelatine, soaked in cold water for 5 minutes
  • 2 oranges, peeled and segmented, juice reserved
  • oil, for greasing
