Fennel and asparagus 'tar-tar' with a fennel cloud

Ingredients

For the fennel juice

  • 3 large fennel bulbs, juiced
  • 5g ascorbic acid, also known as Vitamin C powder, available from health food shops and online
  • 50g/1¾oz sugar
  • pinch salt

For the fennel cloud

  • 50g/1¾oz caster sugar
  • 320ml/11fl oz strained fennel juice (from above)
  • 18g/½oz albumin powder
  • 1 leaf of gelatine, soaked in cold water
  • 2 tsp Pernod
  • 5g fennel pollen, available online (optional)
