Preheat the oven to 220C/425F/Gas 7.
Heat the honey, butter and sugar in a non-stick frying pan for a few minutes.
Add the peach halves to the pan and allow to caramelise for a few minutes.
Transfer to the oven and heat for 8-10 minutes.
Remove from the oven, transfer to a serving plate and serve the Stilton slices alongside.
