Preheat the oven to 200C/400F/Gas 6.
Heat the oil in an ovenproof pan and gently fry the swede, potato, garlic and herbs for 6-8 minutes, stirring regularly.
Add the broccoli florets, season, to taste, with salt and freshly ground black pepper, then transfer to the oven to cook for a further 8-10 minutes, or until the vegetables are tender.
