How to make a checkerboard cake

First make two Victoria sandwiches of different colours - chocolate and vanilla work well. Cut each cake layer into three equally wide concentric rings, like a target.

Use a cutter to cut a circle out of the middle of each cake, pressing firmly down to ensure you cut cleanly all the way through. Remove the circles and set aside. For the next circle, cut a card template as a guide, and cut round this with a sharp knife.

Now place the cut rings of cake inside one another, alternating the colours. Spread each layer with a little buttercream. Using a wide spatula or cake lifter, stack the layers on top of each other so that the outer ring colours alternate vertically as well.

Cover the cake with icing, and when you cut into it you will reveal the checkerboard pattern.
